Stuffed Tomatoes Appetizer
If you are looking for a fairly simple appetizer, then look no more. These tasty little treats will be great to pass around or set out during a party or shower. I made them a few weeks ago when wanting to spice up a meal just a bit.
Ingredients
- 2 Roma Tomatoes
- 4 Small, fresh basil leaves
- 2 Slices of Bacon
- Mozzarella Cheese
- Parmesan Cheese
Start off by halving each of the tomatoes and removing the core and seeds, making a nice little hollow opening to put the other ingredients. It doesn't have to be perfect, but you don't want to cut all the way through the skin.
Now lay the basil, yes, the whole leaf, into the tomato. Add about half a piece of cooked bacon as well. You can leave the bacon as a whole half, or you can crumble it up into bits if you like.
Now simply cut mozzarella into slices about the size of the tomato. I prefer for it to not be too thick. I want it to still easily melt and be a little runny and cheesy when I'm eating it.
Put it in a pre-heated oven (400 degress F) for about 10-12 minutes. You should see the cheese melted and tomato roasted just a bit.
Now for the bonus part. Take Parmesan cheese and sprinkle it over the top. Put it back in the oven on broil for 2-3 minutes. The cheese will be browned just a bit, and that stuffed tomato will be ready to pop in your mouth!
Instructions
- Preheat oven to 400 degrees F. Half each tomato and remove the core and seeds.
- Place basil, bacon, and mozzarella cheese into the tomato. Put tomato in a small baking dish and bake in oven for 10-12 minutes.
- Remove from oven and sprinkle Parmesan cheese on top. Place back in oven on broil for 2-3 minutes until cheese is slightly browned. Serve and enjoy!
