Simple Recipes: Oven Roasted Cauliflower
Cauliflower. What comes to your mind when you hear it? Be honest.
For some people, they love it. Others...well, they try to stay away from it. Believe it or not I fell into the latter group. Even though I love broccoli (and they just look so similar), the very thought of eating cauliflower disgusted me. I say that just in case you are reading this and are wondering why anyone would find cauliflower cooked anyway delicious. Earlier this summer I would have agreed with you. My sister in law had cooked some cauliflower like this for my parents and I didn't hear the end of it. Finally I heard so much ranting and raving about it I decided I needed to test it out for myself. I was quite unsure what to expect. I cooked it skeptically, but when it was finished I was extremely surprised with how good it was. Since then, I have cooked it multiple times and have even craved it a few times!
For all of you cauliflower lovers out there, you'll love it even more. For all of you skeptics, I challenge you to give this recipe a shot and see if you think any differently about cauliflower afterwards. Let me know how it goes.
Here's what you do.
Start off turning the oven on to 400 degrees F. Then, take a head of cauliflower, wash it, and cut it into small pieces. Place them in a mixing bowl where you can drizzle olive oil over it and season it. I like to use garlic/herb seasoning along with a spicy steak seasoning. Sometimes I will mix it up and try different kinds of vegetable seasonings, but the first I listed is my favorite so far. I use a wooden spoon to mix it all together and will add additional oil or seasoning if all of the pieces of cauliflower are not covered. Next, prep a baking sheet by putting aluminum foil over it.
Now you take the mixing bowl and spread the cauliflower across the baking sheet. Get the pieces as even as possible so they will be evenly cooked. Again, eye ball it to see if you need to add any extra seasonings. Then, into the oven for 20 minutes it goes!
After 20 minutes you pull the pan out of the oven and let it cool. Ta-da! It's finished and ready to serve. My favorite things to put it with are burgers and other green vegetables.

- Seasonings to taste
Instructions
- Preheat the oven to 400 degrees F. Wash and slice the cauliflower into small pieces, being sure to remove all the green parts. Place them into a mixing bowl.
- Pour olive oil and seasonings over the cauliflower and mix it together with a wooden spoon. If the oil and seasonings do not cover all the pieces, add in more until sufficiently covered.
- Spread the cauliflower evenly onto a baking pan lined with aluminum foil. Place in the oven for 20 minutes. Remove and serve!
