Lunch Ideas: Granola Wrap
Sometimes it's hard to be creative with what you eat for lunch. As much as I love leftovers and try to have those for lunch as often as possible, sometimes all the food gets eaten before it makes it into a lunchbox. The recipe either did not make as much as I thought it would or my husband and I were just more hungry than we thought! It's good to have lunch ideas in your back pocket so when you look in the fridge and there is nothing else to eat, you've got something. This is a classic. It's easy. It's quick, and you probably have all the ingredients on hand.
These were served at a dorm cafeteria at Baylor University (where my husband and I both attended), and they were a hit among students. Years after having one, these wraps had still left a mark on our memories. After remembering them together one day, I decided to recreate them. Here's how you make them.
Ready for this? It's incredibly easy.
Take a tortilla (whole wheat if you have it - the thinner it is the better) and spread some peanut butter on it. Then, cut up about 1/4 of a green apple into small squares. Place them over the peanut butter and sprinkle granola on top of the apple.
Roll it up and enjoy.
It's that simple.

- Whole Wheat Tortilla
- Peanut Butter
- Green Apple
- Granola
Instructions
- Spread peanut butter on the tortilla. I did not put an amount of peanut butter on here for a reason. It's like peanut butter and jelly sandwiches. Everyone has their opinion for the ratio of peanut butter to jelly. I'll let you make the call on how much peanut butter you spread on this tortilla!
- Slice about 1/4 of a green apple into small cubes. Place them on top of the peanut butter. Sprinkle desired amount of granola on top.
- Wrap it up and enjoy!
